I was at the Community Kitchen the other day, and they are having their 10 yr anniversary on October 13th (a Wednesday).


They were looking for people to help cook, so the staff can celebrate, doing an Hors d' Oeuvres party for about 150.


Chef Lenny Rubin had been there to say he would pitch in and help, how about the rest of our members.


I was hoping, that we, as a chapter, put aside this one evening and come help out the Community Kitchen celebrate this joyous event.

Moving Onward and Upward

August 31, 2010

Dear ACF Members and Associates

For the last 15 years, I have made Phoenix my home and have been an active member of the ACF Chefs Association of Arizona. I have served many positions within this organization and have received many more benefits.

My family and I have decided to relocate to Charleston, South Carolina. This is not an easy decision for us as we have many friends and ties in Arizona and have made many commitments to colleagues and friends. Never the less, a move at this time is what is best for us and we will be heading east at the end of September.

As immediate past president and current chairman of the board of directors for ACFAZ, I realize the impact I have had on this chapter and the events that are pending where I have strong ties and responsibilities. I am working closely with Carlton Brooks and the rest of the board to make sure that my responsibilities to the chapter are met, and that the events I have helped to plan and bring to Arizona are still a success. I plan to remain a proud member of the ACFAZ and I look forward to being an active member and participant when our chapter hosts the 2011 Western Regional Conference. This should be a shining moment in our chapter’s history.

Thank you all sincerely for your support over the years, and I leave with nothing but the highest level of respect and passion for what we as a chapter have accomplished over the years. I wish continued success for the ACF Chefs Association of Arizona.

2010 Minors All Natural Contest results

2nd Annual ACF AZ Minor’s 100% Natural Chef Contest

And the winners are........

Lenard Rubin

Executive Chef at the Vig and the Vig Uptown in Phoenix, and a member of the ACF Arizona chapter, Took home first place honors and $1,000 cash for the second year in a row. He prepared two courses which included Ancho Chile and Achiote Rubbed Salmon with Shrimp and Smoked Pork Arepa, Morel-Clam Sauce and Roasted Corn-Avocado Salsa and finally - Carne Asada on Potato Pancake with Guacamole, Pico de Gallo, Crema, Cotija Cheese and Roasted Red Pepper Sauce. Chef Rubin used New Minor’s All Natural Beef Base, Minor’s Culinary Cream and four other Minor’s Bases and Flavor concentrates in his championship entry.

Sous Chef at La Auberge Resort in Sedona, Arizona. Captured Second place second and took home $500 cash. He prepared Pan Seared Scallops on Fromage Blanc Crostini finished with a Honey Garlic Emulsion as a first course and Disassembled Lobster Pot Pie as his second course..

Line Cook at Lon’s at the Hermosa Inn in Paradise Valley, Arizona and a member of the ACF Arizona chapter, Finished Third for the second year in a row in a much more diverse field. She won $300 cash for her Brined Pork Loin with Summer Stone Fruits, Home Made Cheddar Biscuits,Mustard Greens, and Pan Gravy.

A high school student and line cook at Fargo’s Steakhouse in Payson, Arizona and a member of the ACF Arizona chapter. He finished fourth and walked away with $200 cash for his Chipotle and Roasted Garlic Lamb Tenderloin, Grilled Eggplant and Mushroom Involtini, Herb de Provence Rosti with a Roasted Red Pepper Vinaigrette and Citrus Herb Gremolata

Over $3,300 was awarded in cash prizes and scholarships to the 10 finalists and culinary students statewide from Nestle Professional, Minor’s and the ACF Arizona chapter.
